I've also always eaten my scrambled eggs with ketchup.
So it should come as no surprise that my favorite dish in China so far is Xi Hong Shi Chao Ji Dan... tomatoes cooked with eggs.
I'm so in love with this dish that I've hunted down the recipe and tonight I've tried cooking in on my own. I say, success! I also say, I've eaten so much in the past few days that I've noticed a certain splotchiness as a result.
Again I say, old habits die hard. I can't wait to share this recipe with you guys back home!

Anyone who's seen me cook knows I don't "do" recipies so what I can give you is tell you what I did.
SO, quarter a handful of tomatoes... you can make them smaller if you like. I used four large ones.
Toss a bit of brown sugar in there, you just need enough to cut the acid from the tomatoes. Then throw in some chopped green onion, I used 1/4 cup for four tomatoes, could've used more. Then toss in a little salt to taste. When the tomatoes have softened and have become quite juicy start gooking the eggs. They just need salt and pepper to taste, don't put milk in them. Cook them until they're pretty dry. I tossed a touch of oil in the pan to keep them from sticking. Once they're done toss them into the tomatoes and let them simmer in there for a few.
This is really good over rice but I prefer to eat them with egg noodle. ENJOY!
Is there anything you won't put tomatoes in? (don't answer that)
I swear y'all. I could be cooking chocolate brownies and Jackie will lean over and point at them and say, "You know what would be good in that?." And I'll have to say, "No Jackie. We are not putting tomatoes in the brownies."
